if there was no "technology" there would be no oven to cook your cake.

You're doing it now! interweb, recipes, ask people, search for recipe ideas. True cake decorating is a manual skill still, but the way the information is sourced is technical.

Cake decorators use many technology related appliances. From ovens to mixers to microwaves, everything is computer controlled now a days. If you're working in your own shop then you have POS (point of sale) machines (cash registers, etc) that are also heavily tech related.

I am a cake decorator myself, and use all the above as well as some cake decorator specific items such as our photo image machine. We do a lot of inventory control which is kept track on the computer. It is possible to have a projector set up as well which helps with freehand drawing since you can project an image onto the cake.

Then there are other items such as fondant sheeters, deep fryers, proofers, sheet pan depositors, etc that can rely on technology.

We use technology to make our signs, print our labels, place our orders, and communicate with customers

Hope this helps
Cheers

Technology, in the form of ovens, mixers, other kitchen tools have already affected baking. If you think about it....from brick ovens to electric ovens, hand mixers to electric mixers, technology has changed not only how we do it,but how it tastes too.
What if someone were to create a machine that made perfect fondant every time....and another that rolled it perfectly? Cake decorating would be so much easier, wouldn't it?

think like your grandmother would..."all these new fangled things! In my day..." and you'll get the answer right, it will make sense to you.
