How about a Uromastyx. They are a docile and in some cases beautiful lizard from very arid climates throughout Asia and North Africa. They are vegetarian so the diet is simple and if anything will help you to eat more healthy as well.
General Information:
Diet: Dark Greens: ie. Collard Greens, Endive, Red Leaf/Romaine Lettuce, Mustard Greens. Mixed with a simple bird seed lentil blend for protein. Supplement with Calcium twice weekly.
Enclosure: Hot... Basking area of 110* with ambient temp in the 90's. Full spectrum UVA/UVB lighting. 4'x2' enclosure. They should be able to get all their water needs from the food. Nighttime temps can drop to the low 80's
Wonderful and exotic pets, captive bred from a breeder should be around $120.
